chicken breast: 1 pound (cubed)
scallions: 3 (white part, sliced)

salt: 1 1/2 tablespoons
dry sherry: 1 tablespoon

vegetable oil: 3 tablespoons
broccoli: 5 to 6 cups (trimmed and sliced)
red chili flakes: 1-2 teaspoons (optional)
hoisin sauce: 1 tablespoon
sesame seeds: optional

How to cook: First, toss the chicken breast in medium bowl with the white scallions, put half of garlic and ginger. After that, mix it with sugar, salt, soy sauce, cornstarch, dark sesame oil, and dry sherry, leave it be for 15 minutes with room temperature and add the water.

Heat the frying pan to a high temperature, add 1 tablespoon of vegetable oil and put the broccoli, stir fry for 30 seconds. Add the remaining garlic and ginger, Stir fry it again for another 2 minutes until the broccoli turn bright green. Transfer it to the plate.

Use the rest of the vegetable oils in the frying pan, add the chicken breast and red chili flakes (optional). Stir fry the chicken until it turn brown (around 3 minutes). Add hoisin sauce and put back the broccoli into the frying pan for another 1-2 minutes. You can try to taste it and you can put more sugar, salt, or chili if you like. Now it’s ready and it will be enough for 4 dishes. You can eat this with rice.
