· a cup of onions

· 3 cups of broccoli that are chopped into small pieces

· a cup of potatoes

· 4 cups of vegetable broth

· ¼ a cup of whole milk

· Teaspoon of pepper

· Salt to taste

· A little oil or butter


Heat the oil or butter and add onions, garlic and salt. Fry them for a few minutes and be careful not to overcook the onions; the onions should not turn to brown. When the onions are still translucent, add broccoli and potato then fry the mixture for 1 more minute. Add the vegetable broth and cover the mixture so that the potatoes and the broccoli can cook. Then take the remaining mixture and put it in a blender, blend it until it becomes smooth. Add cheddar and milk to the smooth mixture in the blender and blend again. 

The hot mixture will help to melt the cheddar. Then put the mixture to medium heat and add the broccoli pieces, which you had saved earlier and add some pepper. Serve the soup when it is hot.
